TEX-MEX MEATLOAF
1 Tbs. oil
1 small onion, finely chopped
1 small green pepper, finely chopped
3 cloves garlic, minced (or less)
2 lbs. lean ground beef
1 cup shredded Mexican-style cheese blend (from 8oz package)
1/2 cup spicy steak sauce (like Heinz 57 for example)
1/2 cup plain dry breadcrumbs
2 eggs
2 Tbs. chili powder
1 tsp ground cumin
1 tsp. salt
1/2 cup chunky salsa from a jar
Preheat oven to 375 degrees
Coat shallow roasting pan with cooking spray
In non-stick skillet, heat oil over medium heat, add onion, green pepper and garlic, Cook until softened, about 3 minutes Remove from heat and cool about 5 minutes.
Combine mixture with beef, cheese, steak sauce, bread crumbs, eggs, chili powder, cumin and salt. Transfer to pan and shape into an 8x5 lof.
Bake until meat thermometer registers 160 degrees or approximately 55-60 minutes. Spread with salsa and bake another 5 minutres.
Let stand 10 minutes before slicing.
