RED VELVET POUND CAKE
3 cups unsifted flour
3/4 cups milk
3 cups sugar
1 bottle red food coloring (small)
3/4 cup shortening
7 eggs
1/2 cup butter
1 teaspoon baking powder
1 Tablespoon vanilla
1/4 teaspoon salt
1/2 cup cocoa
Cream sugar, shortening, vanilla, food coloring and eggs. Add dry ingredients and milk. Bake in large greased and floured tube pan for 90 minutes at 275 degrees. Turn out of pan to cool for icing. (See icing recipe below)
ICING
1 package (8 oz) cream cheese
1/2 box confectioner's sugar, plus two Tablespoons
1 teaspoon vanilla
1/2 stick butter, softened
Cream together until smooth. Spread on cooled cake.
