ORIGINAL RED VELVET CAKE
(Makes one large oblong cake or one 3-layer cake)
Preheat oven to 350 degrees.
4 bottles ( 1/2 oz size) red food coloring
3 Tablespoons cocoa
1/2 cup vegetable shortening (crisco is fine)
1 1/2 cups granulated sugar
2 eggs
1 teaspoon vanilla
2 1/2 cups sifted cake flour
1 teaspoon salt
1 cup buttermilk
1 Tablespoon vinegar
1 teaspoon baking soda
Mix food coloring with cocoa and set aside.
Beat shortening with sugar, then add eggs one at a time, beating after each
addition.
Add food coloring mixture and vanilla.
Alternately, add flour, salt and buttermilk, beating well.
Stir in vinegar and baking soda.
Bake in 350 degree oven for 30 minutes (test for doneness). Makes 1 large loaf
cake or a 3 layer cake.
Cool and ice with Cream Cheese Icing
CREAM CHEESE ICING
1 package (8 oz) cream cheese
1/2 box confectioner's sugar, plus two Tablespoons
1 teaspoon vanilla
1/2 stick butter, softened
Cream together until smooth. Spread on cooled cake.
