SCALLOPED CUCUMBERS

2 large cucumbers, peeled and cut into 1 inch cubes

1/4 tsp. pepper

1 tsp. bacon drippings or butter

1 medium sliced onion

1/2 tsp. salt

1 cup scalded milk

1 cup fine bread crumbs

1/3 cup grated cheese (I use parmesean or romano)

In medium sauce-pan, cook cucumber, onion, salt and pepper in a couple cups of water for 15 minutes, then drain.
Put 1/2 of cucumber mixture into buttered dish, dot with butter or the drippings and pour milk over the top.
Spread 1/2 cup of the crumbs over the top of the mixture.
Add the rest of the cucumber mixture and top with the rest of the crumbs and the grated cheese.
Bake at 350 degrees for 20 to 30 minutes.
