OLD-FASHION CREAM PIE
My mother use to make this back in the 40's & 50's and it was always a favorite.
Have prepared ahead of time, pastry shell for one crust pie. Crust recipe follows.
1 1/2 cups white sugar
1/3 cup all-purpose flour
1 cup boiling water
1 lump butter, softened (2 Tbsp. or so)
1 cup cream
Preheat oven to 375 degrees.
In medium mixing bowl, mix sugar and flour
till well blended. This helps to prevent lumps.
Add boiling water to sugar/flour mixture and stir till sugar is dissolved. A
minute or so.
Add softened butter and stir around.
Add one cup of cream and stir well till it is blended.
Pour into pastry shell.
Bake 45 minutes, or until set, stirring twice during baking process.
PASTRY FOR ONE-CRUST PIE
1-1/4 cup all-purpose flour
1/4 tsp. salt
1/3 cup shortening
4 to 5 tsp. cold water
Blend salt into flour.
Cut in shortening till it resembles course oatmeal.
Using a fork to mix, gradually sprinkle in water with flour mixture.
Knead dough just enough to form a nice ball.
Roll out on floured surface to about 12 inches round.
Carefully fold dough in half, place into pie pan and unfold to cover pan evenly.
Trim to 1 inch beyond edge of pan, fold under and crimp.
Do not prick pastry!
