SPICY PUMPKIN BARS

Preheat oven to 350 degrees
Grease and flour 13x9 inch pan

4 large eggs

1 3/4 cup sugar

1 cup oil

2 cups (16 oz. can) solid pack pumpkin

2 cups all-purpose flour

2 tsp. baking powder

1 tsp. salt

2 tsp. pumpkin pie spice

1 cup golden raisins

 

In mixer, beat eggs until frothy; beat in sugar and continue beating for 2 minutes
Beat in oil and pumpkin till blended
Sift dry ingredients (flour, baking powder, salt and spice) over the raisins and fold dry mixture into the egg mixture. Do not over mix.
Pour into the prepared baking pan and bake for 35 to 40 minutes.
Check for doneness with toothpick. .
Cool on rack and cut into 24 squares.

May garnish with a walnut half on top of each square if you like.
