MOM'S OATMEAL COOKIES
My Mom use to make these back in the late forties and fifties on cold winter days. These cookies are soft and moist, and not overly sweet, like warm oatmeal for your hands. The raisins, although optional, add just the right flavor.
Preheat oven to 350 degrees
1/2 cup Crisco (My Mom had used lard)
1 cup sugar
1/4 cup milk
2 eggs
1 2/3 cup quick oats
1 1/2 cups flour
1 tsp. soda
1/2 tsp. salt
1 tsp. cinnamon
1/2 cup of raisins (optional)
Cream sugar, and shortening
Add eggs and milk till combined
Add oats, flour, soda, salt, and cinnamon, mixing well
Add raisins if desired
Drop by large walnut size spoonfuls onto Teflon cookie sheet
Bake for 15 - 18 minutes, or until golden around the edges,
depending on your oven
Transfer, from cookie sheet using spatula, to cooling rack
Makes approximately 2 dozen
